Prep Time: 15 minutes
Bake Time: 14–15 minutes
Cooling Time: 5 minutes
Total Time: About 35 minutes
Oven Temperature: 400°F
Servings: 12 muffins

Ingredients

  • 1 cup yellow cornmeal
  • ¾ cup all-purpose flour
  • ¼ cup sugar
  • 2½ teaspoons baking powder
  • ½ teaspoon salt
  • ½ teaspoon apple pie spice
  • ¾ cup milk
  • 2 large eggs
  • ¼ cup butter, melted
  • ¾ cup fresh or frozen unsweetened peaches, chopped
  • Light vegetable oil spread, for serving (optional)

How to Make Peach Cornmeal Muffins

1. Prepare the oven and dry ingredients

Preheat your oven to 400°F. Grease twelve 2½-inch muffin cups and set them aside.

In a medium bowl, combine the cornmeal, flour, sugar, baking powder, salt, and apple pie spice. Stir until the dry ingredients are evenly combined. Make a well in the center of the mixture.

2. Prepare the peach batter

In a separate small bowl, whisk together the milk, eggs, and melted butter. Gently stir in the chopped peaches.

Pour the peach mixture into the bowl with the dry ingredients. Stir just until everything is moistened. Be careful not to overmix the batter—a few small lumps are perfectly fine.

3. Fill the muffin cups

Divide the batter evenly among the prepared muffin cups, filling each one about two-thirds full.

4. Bake

Place the muffins in the preheated oven and bake for 14 to 15 minutes, or until the edges are firm and lightly golden.

To check for doneness, insert a toothpick into the center of one muffin. It should come out clean or with only a few moist crumbs attached.

5. Cool and serve

Allow the muffins to cool in the pan on a wire rack for about 5 minutes. Carefully remove them from the muffin cups and serve warm.

If desired, serve with a little light vegetable oil spread for an extra creamy finish.

Tips for Delicious Peach Muffins

Fresh or frozen peaches will work. If using frozen peaches, there’s no need to thaw them completely before adding them to the batter. Chop larger pieces into bite-sized pieces so the peaches are evenly distributed.

Don’t overmix the batter. Stir just until the dry ingredients are moistened. Overmixing can make muffins dense rather than tender.

Want more peach flavor? Use ripe, naturally sweet peaches when they’re in season. Their flavor and juiciness can make these simple muffins even more delicious.

Serve them warm. These muffins are particularly enjoyable while they’re still slightly warm, when the cornmeal gives them a pleasant texture and the peach flavor really shines.
